Only a couple days left until the start of December and before you know it, Christmas is here! I love the bright colors, comforting scents, joy and excitement that accompany us throughout December. Ideally, it brings loved ones together and we get a chance to share some special moments. Sadly, this is also the season of family members arguing a lot, couples fighting, everyone buying things they don't need, creating tons of unnecessary waste, and, of course, consuming immense amounts of food. Ahhh November. So much to love: The changing colors, rough winds, crisp leaves and rainy days, moody skies, and cuddling up in bed regularly. Despite my love for fall, I often feel like my immune system has a hard time keeping up with all those wet and cold days and my declining energy level. I have never met a chocolate cake I didn't like. But I do have a special fondness for moist ones with nuts and bananas in them and this tweaked version of my mom's recipe is my favorite. It is my go-to dessert, great when you want to bring something special and homemade to the office for a birthday or tea and cake afternoon delights at home. Seriously, everyone loves this cake and the best thing is, it stays yummy for days (when wrapped properly). I have adapted the recipe to fit my organic and fairtrade taste and it has only become yummier in the process: flourless organic chocolate cake heaven, here we come! (more…)
